In a saucepan add rice and salt and stir to coat, then pour in some vegetable broth. Add the onion and continue adding the broth little by little until rice is tender but not sticky. When the rice is cooked, remove from heat, add the Pecorino with truffle and butter and toss to blend the flavors. Let sit covered by a towel for almost two minutes.
